Leftover Christmas Recipes
No matter how many people you invite to Christmas dinner, there will always be leftovers. Instead of eating the same thing over again, try these fun recipes to give your leftovers new life.
Ham Stuffed Manicotti
Try something a bit different this year and switch from American to Italian in a instance. Chances are that spiral ham you have was so big it could feed an army. Use the left over meat to make manicotti. It’s fast, easy, and most importantly delicious!
You will need:
- 14 manicotti shells
- 1 chopped onion
- 1 garlic, chopped
- 1 pepper copped
- 1/4 olive oil
- 2 cups cooked ham
- grated cheese to taste
- 6 Tbsp. butter
- 6 Tbsp. flour
- 3 cups milk
- 2 cups shredded Mozzarella cheese
Step 1: Preheat the oven to 350 degrees.
Step 2: Cook the manicotti as directed on the package. When finished, drain the excess water and set aside.
Step 3: In a pan, combine the onion, garlic, and pepper with the olive oil. Add the ham and stir in the grated cheese. Turn the mixture to low and set aside.
Step 4: In another pan put in the butter. Stir in the flour mixing constantly until the mixture bubbles. This should take about 4-5 minutes. Add the milk and continue to stir constantly. The sauce will thicken. Stir in the cheese.
Step 5: When finished, combine the sauce with the ham, onions, garlic, and pepper.
Step 6: Fill the manicotti shells. Spread the cheese sauce on the bottom of the pan and put the manicotti on top. Pour remaining sauce over the manicotti shells.
Step 7: Cook the manicotti for 45 minutes and enjoy!
Chocolate Cranberry Mousse Pie
What you will need:
- 1 pie crust
- 1 cup white chocolate chips
- 2 cups heavy whipping cream
- 1 cup semisweet chocolate chips
- 1 tsp. grated orange peel
- 1 cup whole berry cranberry sauce
Step 1: Melt the white chocolate chips with 1/2 cup whipping cream over low heat. Stir until smooth and let refrigerate until it’s cool.
Step 2: Melt the chocolate chips with 2 tbsp. of whipped cream. Again use very low heat. Stir until smooth and spread this over your pie crust. Let it set.
Step 3: With the leftover cream beat it until it’s stiff. Fold this into the white chocolate/whipped cream mixture. Add the orange peel.
Step 4: Layer the mixture with the cranberry sauce over the pie shell.
Step 5: Refrigerate for 8 hours or until firm.
